Lime Bars

Make 16 squares; serving size = 1 square

This tangy dessert is packed with healthy fats from a secret ingredient- avocado! Avocados turn brown when exposed to air so this dessert is best eaten shortly after assembled. It's the perfect party food.


Crust

¾ cup raw pecan pieces

¾ cup almond meal

3 tablespoons salted butter

2 tablespoons organic stevia powder


Filling

Grated zest of 3 limes ( 2 ½ tablespoons)

¼ tablespoons of lime juice

1 teaspoon vanilla extract

3 avocados mashed with a fork

2 tablespoons coconut sugar

4 drops liquid stevia

¼ cup of organic coconut cream



Directions

1. Preheat the oven to 350. Line an 8-inch square baking dish with parchment paper so that the paper comes up two the sides. You will use these like handles to lift out the bars later.


2. Place the crust ingredients in a food processor and pulse until the mixture resembles coarse sand. Press the mixture firmly into the bottom of the pan, making sure to get it into the corners. Bake for 13 to 15 minutes, remove from oven when edges start to turn brown. the crust will probably appear under baked in the middle. Allow it to cool while you assemble the filling.


3. Place all ingredients for the filling except 1 tablespoon of the lime juice in a large mixing bowl and beat with a hand mixer until smooth.


4. Spoon the mixture into the crust and smooth with a spatula. sprinkle the remaining 1 tablespoon lime juice over the top. Swirl and tip the pan around to distribute, this will help the top from oxidizing.


5. Place in refrigerator for at least an hour to cool, several hours is preferred. When ready to serve, use the parchment paper to carefully lift the cake out on to a cutting board. Cut into the square and serve
